The regulations set forth by the Department of Resources Recycling and Recovery (CalRecycle), define certain “Commercial Edible Food Generators”. Specifically, Tier 2 Commercial Edible Food Generators include any hotel with 200 or more rooms and an on-site food facility, or restaurants with 250 or more seats or a total facility size equal to or greater than 5,000 square feet. Beginning January 1, 2024, Tier 2 Generators must start recovering and donating the maximum amount of edible food, and specific recordkeeping and documentation is required. Please review the materials carefully to determine how the law may apply to your hotel.
